In one of my earlier posts, I describe the personal journey Dr. Terry Wahls took to create a nutrition plan after she was diagnosed with Multiple Sclerosis (MS). The nutrition program she follows is not only appropriate to brain health, it is also beneficial to your bones.
I wanted two share with you two recipes that follow Dr. Wahls’ nutrition program. Both recipes are easy to do and both dishes keep well in your fridge.
A Delicious Kale Salad
Serves 6
- 2 bunches kale, washed, dried and chopped
- 1/2 medium red onion, chopped
- 1 medium apple, seeded and chopped
- 2 teaspoons garlic, minced
- 2 teaspoons fresh ginger, peeled and grated optional
- 1 whole, ripe avocado, peeled and chopped
- 3 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 2 teaspoons Tamari soy sauce
- 1/4 cup raw cashews, chopped.
Place kale in large bowl (preferably one with a lid.)
Mix apple with 1 Tbsp of the lemon juice – keep aside. Place all other ingredients, including the other 2 Tbsp of lemon juice in a large jar and shake well. Pour over the kale and mix well. Fold in the apple and cashew pieces.
Keeps well for at least a week.
Light Coleslaw
- 1 medium head cabbage, shredded
- 1 large red onion, diced
- 1 cup grated carrots
- 2 stalks celery, chopped
Mix the following dressing and pour over the vegetables:
- 4 small packets of stevia (8 grams or two teaspoons)
- 1 cup apple cider vinegar
- 1/2 cup sunflower or safflower oil
- 1 tsp salt
- 1 tablespoon dry mustard
- black pepper to taste
Stir well and if you are keeping it for a few days – stir the mixture occasionally. Tastes even better after it has marinated for a few days.

My neighbour introduced us to Kale a few years ago when she had too many plants started in the spring to fit into her garden. We started growing it too and really appreciate it: it freezes well in the fall (one of those vegetables that is sweeter after a frost). My neighbour suggested stirring Kale into a saucepan with potatoes as they are nearly cooked, then when both are done, drain and mash together. Add a little butter and enjoy!
